Mincemeat and Apple Jalousie
By James McIntosh Serves 8
A little flour 2 x 500g blocks shop-bought puff pastry 125g block marzipan 2 x 410g jars mincemeat 2 tbsp brandy 2 eating apples, cored and sliced 1 tbsp Demerara sugar 1 egg, beaten
Here’s how to make it...... Lightly flour the work surface and unroll one sheet of puff pastry. Roll out a few times in each direction to enlarge. Line an AGA square flan dish. Grate the marzipan over the pastry using a Microplane coarse grater.
Mix the mincemeat with the brandy and spread over the marzipan. Arrange apple slices on top and sprinkle with sugar.
Cut 1cm (½ inch) strips of puff pastry and make a lattice to cover the apple. Brush the pastry with beaten egg.
2, 3 and 4 Oven AGA: cook on the floor of the roasting oven for 25 minutes.
James says... “There is no shame in using shop-bought pastry; some of it is brilliant and better than I can make, so use it! Keep some in the freezer for pie toppings and baking.”
Mincemeat
There are many good mincemeats available in the shops, but it’s great to make your own. To make shop-bought mincemeat more exciting, why not chop up a few apricots and mix through with a little Cointreau.
