Leek and Apple Quiche with St Agur and Calvados

Makes 8

250g ready made shortcrust pastry
1 tbsp vegetable oil
2 leeks, washed and cut into rings
1 red onion, peeled and sliced
1-2 tbsp Calvados
1 Bramley apple, cut into matchsticks
1 x 200g block St Agur cheese
2 eggs
1 x 150ml tub double cream

Here’s how to make it......

Roll the pastry on to an AGA Bake-O-Glide roll-out pastry mat, so it lifts off easily. Line a 28cm AGA ceramic flan dish. Place in the fridge to rest.

Put the oil, leeks and onion into an AGA saucepan and on to the boiling plate until the oil sizzles. Place the lid on top and put into the simmering oven for 15 minutes until soft.

Place pan on the boiling plate, add the Calvados and flambé. Allow to cool.

Arrange the onion, leek and apple over the pastry base and top with the cheese. Beat the eggs and add the cream then pour the mixture over the quiche.

2, 3 and 4 Oven AGA: place on to the floor of the roasting oven for 20-25 minutes until the pastry is crisp and the filling is set.
